Ingredients:
Chayote Squash (chow chow) chopped - 1
Red Chillies - 2
Curry leaves - a few
Mustard Seeds - 1/2 tsp
Urud dal - 1/2 tsp
Hing - a pinch
Salt
Turmeric powder - a pinch
Oil - 2 tsp
Grated Coconut - 1 tbsp
Method:
Heat oil in a pan. Add mustard seeds, red chillies and urud dal.
When mustard seeds splutter, add chayote squash, hing, turmeric, salt and curry leaves.
Close the lid and cook on low flame.
When the squash turns soft, add fresh grated coconut and mix well.
Serve with rice and sambar.
This curry looks very inviting....sure quick to fix up for lunch
