Carrot Halwa

Dear Readers,
Wish you all a very Happy Diwali! Hope you are having a blast with your family. Carrot halwa is a delicious dessert. I am sure everyone loves it.



Ingredients:
Carrots - 6 big
Sugar - 1 1/2 cups
Cardamom - 1/2 tsp
Saffron - a few
Milk - 1 1/2 cups
Cashew powdered - 1/2 cup
Ghee - 3 tbsp

To garnish:
Roasted nuts and raisins - a handful

Method:
Peel the skin and grate the carrots.
Heat 3 tbsp ghee in a wide pan.
Roast the nuts till golden brown and set aside.
In the same pan, add grated carrots, cardamom and saffron and saute for 2 minutes.
Add milk and let it cook on low flame for 40-45 minutes till all milk is absorbed and the mixture becomes thick.
Add sugar and cook for 5 minutes.
Add cashew powder and mix well.
Simmer for 5 minutes.
Garnish with roasted nuts and add some ghee before serving.
